Rare Beef salad with walnuts and feta 

  • 8 thin slices of rare beef
  • 200g feta
  • A handful of walnuts
  • 250g salad leaves
  • Half a cup of extra virgin olive oil
  • 1 tablespoon balsamic or red wine vinegar
  • Sea salt and freshly ground black pepper

Heat a little olive oil in a saucepan and toss the walnuts in it until browned. Arrange the washed salad leaves in the middle of 4 serving plates. Drape the leaves with the rare beef and sprinkle with cubes of feta and the roasted walnuts. Mix oil, vinegar, salt and pepper and drizzle over the salad.

Serves 4.
